Long ding teas are made stalks harvested at their tendermost two leaves and a bud stage and are subjected to three contineous cycles of heating and cooling. Following this process the stalks are once again subjected to heat in vibrating chaber that fuses the two leaves and a bud together. This gives Longding teas its characteristic elongated structure. The leaves unfurl beautifully to reveal its entire structure during the brewing process
